Vinification: Carbonic fermentation with natural yeasts,The grapes are tanked under cold temperature (10°), 3 weeks maceration. Then the unique action is a bi-weekly control to follow the evolution of the wine. Ageing : 1 year, 50% in concrete tank and 50% in neutral Burgundian barrels. (3 years old). Not filtered and not fined.
